Lincoln’s Version of the Spud Man is Coming to Cornhill Market

Move over Spud Man – Lincoln’s about to get its very own loaded jacket potato stall!

Inspired by viral TikTok sensations like Spud Bros in Preston and Spud Man in Tamworth, 20-year-old Evie Capps from Horncastle is bringing her twist on the trending food craze to Cornhill Market with her new venture: the Spud Stop.

Launching on Wednesday 9th July, the Spud Stop will serve up golden, oven-baked jacket potatoes with a delicious range of fillings, toppings and sauces – from classic beans and cheese to more premium fillings like Coronation chicken, chicken tikka and even a Spud of the Week.

As with all of the businesses in the market, this isn’t a corporate chain – it’s a proper family-run local business. Evie, who has eight years’ experience working in pubs and cafés across the area, will run it with a little help from her younger sister Libi and a supportive network of friends and family.

“I was originally thinking of opening a coffee shop,” Evie explains, “but after seeing how popular jacket spuds have become on TikTok, I thought: why not give it a go? Everyone loves a spud – they’re filling, comforting and versatile.”

Whether you’re a student on a budget, a busy worker grabbing lunch, or a mum out shopping and in need of a quick bite, the Spud Stop offers something for everyone. In the future, Evie would like to expand the menu to include more vegetarian and vegan options, including jackfruit chilli and vegetable curry.

Prices start at just £4.50 for a small and £5.50 for a large (which is a spud and a half – because who wants to stop at just one?).

“It’s affordable to rent, especially for somewhere so central. The building is beautiful and there’s plenty of indoor seating, so people can sit and enjoy their lunch in a clean, safe space. Plus, I’m surrounded by other brilliant local traders – I feel like I’ve joined a little foodie family.”
